Quinoa Avocado Power Bowl

Quinoa Avocado Power Bowl is a quick and simple meal, packed with colorful antioxidants and easy to make in bulk for lunches throughout the week. Make it your with whatever lettuce, grains, veggies, fruits, and nuts you have on hand. Nourishment doesn't need to be complicated—sometimes the best meals are made from what’s left in the fridge. Fuel up and go get 'em, mama!

SERVES: 2 | ACTIVE TIME: 15 MIN

INGREDIENTS

  • 1 cup cooked quinoa
  • 4 cups arugula
  • 1/2 avocado
  • 4 Tbsp dried cranberries
  • 1 cup diced apple
  • 4 Tbsp walnuts
  • 1 cup shredded carrots
  • sprinkle hemp seeds

Dressing:

  • 2 Tbsp balsamic vinegar
  • 1 Tbsp olive oil
  • 2 Tbsp garlic hummus

PREPARATION

  • Divide all ingredients for the bowl into two dishes, or Tupperware if making ahead of time.
  • For the dressing, combine all ingredients into a jar with a tight fitting lid (like a mason jar) and shake well until mixed.
  • Dress right before serving.

Note: Sub out whatever grains, lettuce, fruits, veggies, nuts, seeds and hummus you have on hand. Eating healthy isn’t supposed to be hard. Make it easy on yourself and enjoy!
