INGREDIENTS
- 2 Tbsp melted coconut oil
- 1/4 cup coconut sugar
- 1 banana, mashed
- 1/2 tsp vanilla extract
- 1/2 tsp almond extract
- 1/4 cup flaxseed meal
- 1/2 cup almond flour
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/4 tsp salt
- 1 1/4 cups rolled oats
- 1 Tbsp chia seeds
- 1 egg
- 1/2 cup raisins
PREPARATION
- Preheat oven to 350°F and line a large baking sheet with parchment paper.
- In a large bowl, mix together melted coconut oil, coconut sugar, mashed banana, vanilla & almond extracts until smooth and creamy. Next fold in flaxseed meal, almond meal, baking soda, cinnamon, oats, chia seeds and salt and mix until a thick dough forms. Lastly fold in raisins.
- Use a 1/4 measuring cup to scoop dough onto cookie sheet – go ahead and make ’em big. Tightly pack the dough into a ball before gently pressing onto the sheet.
- Bake for ~13-16 minutes until edges begin to turn slightly golden brown.
- Enjoy for breakfast, snack or a middle of the night breastfeeding fuel.
