Kale Caesar Salad

This Kale Caesar Salad is a nutrient-dense, fertility-friendly recipe that’s perfect for women looking to support their health. Featuring kale, romaine, and a creamy, egg-less dressing, this light and healthy salad can be enjoyed for both dinner and lunch!

SERVES: 2 | TIME: 5 MIN

INGREDIENTS

  • 3 cups romaine lettuce cut into thin ribbons
  • 3 cups kale, shredded and de-stemmed

Dressing:

  • 3 cloves garlic
  • 2 tsp Dijon mustard
  • 1/4 cup fresh squeezed lemon juice
  • 1/4 cup extra virgin olive oil
  • 1/4 cup Tbsp grated Parmesan
  • 2 tsp capers
  • pinch of ground black pepper

PREPARATION

  • Toss dressing ingredients in a food processor or blender and pulse a few times until well mixed and creamy consistency.
  • Mix half of the romaine and kale in large bowl, setting aside the remainder for tomorrow’s lunch. Toss in half the dressing. Garnish with additional shredded Parmesan, if desired.
  • Serve with Cajun salmon recipe above for dinner Saturday night.
  • Store remaining greens and dressing in fridge for Sunday lunch. Then have again for Sunday lunch with the remaining slice of Turkey + Sage Frittata.

*This is an egg-less Caesar variety for you mamas avoiding raw eggs.
