INGREDIENTS
- 3 cups romaine lettuce cut into thin ribbons
- 3 cups kale, shredded and de-stemmed
Dressing:
- 3 cloves garlic
- 2 tsp Dijon mustard
- 1/4 cup fresh squeezed lemon juice
- 1/4 cup extra virgin olive oil
- 1/4 cup Tbsp grated Parmesan
- 2 tsp capers
- pinch of ground black pepper
PREPARATION
- Toss dressing ingredients in a food processor or blender and pulse a few times until well mixed and creamy consistency.
- Mix half of the romaine and kale in large bowl, setting aside the remainder for tomorrow’s lunch. Toss in half the dressing. Garnish with additional shredded Parmesan, if desired.
- Serve with Cajun salmon recipe above for dinner Saturday night.
- Store remaining greens and dressing in fridge for Sunday lunch. Then have again for Sunday lunch with the remaining slice of Turkey + Sage Frittata.
