Grilled Peach, Pork, Pistachio Salad

This summer salad delight is an easy weeknight dinner featuring juicy tomatoes, ripe peaches, and the sizzle of outdoor grilling. If you are looking for a way to elevate your evening meals, try it with this refreshing salad!

INGREDIENTS

For the salad:

  • 4 cups fresh arugula
  • 2 large tomatoes, diced
  • 2 Tbsp pistachios, chopped
  • 2 Tbsp crumbled feta, ideally organic

For the peaches and pork:

  • 2 ripe, but firm peaches (nectarines work too!), halved & pitted
  • 2 pork loin chops (bone in or out, your preference) 
  • 1/4 cup olive oil
  • 1 minced shallot
  • healthy pinch of salt & pepper 

For the dressing:

  • 1/8 cup lemon juice
  • 1/4 cup olive oil
  • 1 shallot finely minced
  • 1/4 tsp salt
  • 1 tsp honey
  • 1/2 cup fresh mint, minced

PREPARATION

  • Before grilling: Mix together 1/4 cup olive oil, 1 minced shallot and S&P then lightly brush onto both sides of pork and peaches. 
  • Grill
  1. Grill pork to your liking (check out this simple 7-6-5 method).
  2. Grill peaches over medium-high heat, ~3 min skin side up.
  • Make Dressing: Shake all the dressing ingredients together in a jar. 
  • Plate and serve
  1. Each salad gets: 2 cups arugula, diced tomatoes, grilled peaches, 1 pork chop, 1 Tbsp crumbled feta and 1 Tbsp chopped pistachios.
  2. Toss each salad with 2 TBSP dressing and garnish with fresh mint.
