INGREDIENTS
- 1 (4-oz) fillet of salmon
- SPICE BLEND: 1/2 tsp paprika, 1/2 tsp dried onion, 1/2 tsp dried garlic, 1/8 tsp cayenne pepper, 1/2 tsp chile powder, 1/2 tsp cumin, 1/2 tsp salt
Dressing:
- 1/4 large avocado
- 1 Tbsp red onion, finely diced
- 1/4 jalapeno, seeded + minced
- 1/4 cup mango cubes (fresh or frozen)
- juice of 1/2 lime (add more to taste)
- Salt to taste
PREPARATION
- Bake fish: Preheat oven to 4000F. In a small bowl mix together all the spices. Line a large baking sheet with parchment paper. Place salmon skin side down and use your fingertips to rub the spice blend onto both sides of the filet. Bake for ~6-10 minutes or until salmon is cooked through and easily flakes with a fork. (Cook time will depend on thickness of filet.)
- Mix salsa: While the salmon is cooking, make the salsa. In a medium bowl, combine diced avocado, red onion, jalapeno, cilantro, lime juice and mango; stir well to combine then add salt and more lime to taste.
- Once salmon is finished, top with a heaping Tbsp of salsa to serve.
