Broccoli Cheddar Egg Casserole

  • 12 eggs
  • 1/2 cup almond milk
  • 1 cup organic cheddar cheese, grated
  • 2 large heads broccoli (6 cups small chopped florets)
  • 1 yellow onion, chopped
  • 1/2 cup green onion, chopped
  • 2 cloves garlic, minced
  • 1 Tbsp olive oil
  • salt & pepper to taste


  • Preheat oven to 350 degrees F.
  • Whisk together eggs, almond milk and liberal salt & pepper.
  • Saute garlic and yellow onion in olive oil on stove-top, over medium-high heat. Add broccoli florets and continue to cook, just until they start to turn bright green. Add salt and pepper to veggies to taste.
  • Stir sauteed veggies, green onion and cheddar cheese into egg mixture.
  • Rub rectangular baking dish with olive oil or grass-fed butter. Pour egg mixture into baking dish (exact size of baking dish does not make a big difference here).
  • Bake for ~45 minutes, or until knife inserted comes out clean. Let cool and cut into 8 pieces.
