INGREDIENTS
- 2 cups rolled oats (gluten-free)
- 1/2 cup melted, grass-fed butter
- 1/2 cup honey
- 2-3 red apples, grated (about 1 cup total, after lightly packed down and excess juice poured off)
- 2 pastured eggs
- 1 cup walnut pieces
- 1 tsp baking soda
- 1/4 tsp salt
- 1 tsp cinnamon
PREPARATION
- Preheat the oven to 350°F;
- Use a food processor to quickly grate the apple (no need to peel);
- Transfer grated apple to measuring cup, lightly pack down the apple to measure ~1 cup, then pour off excess juice (drink that fresh juice!)
- Using the same food processor (or a blender) add all ingredients except the apples and walnuts. Blend until a chunky batter comes together;
- Add in the walnut pieces and grated apple, give it all a quick pulse to mix, but keep chunky;
- Spoon the batter into a lined muffin tin;
- Bake for 15-18 minutes, until the tops are golden brown;
- Let cool, then enjoy!
