Apple Ginger Protein Muffins

INGREDIENTS

  • 1 cup grated apples, sweet variety like Fuji
  • 2 Tbsp grated ginger
  • 1/2 cup mashed banana
  • 3/4 cup peanut butter
  • 4 eggs
  • 1 Tbsp vanilla extract
  • 1/2 cup coconut flour
  • 1/2 tsp baking soda
  • 1 Tbsp cinnamon
  • 1/4 cup honey
  • 1/2 tsp salt

PREPARATION

  • Preheat oven to 375℉. Line a muffin tin with 7 muffin liners.
  • In a large bowl, whisk together banana, peanut butter, honey, eggs, grated ginger, and vanilla. Add grated apples and mix well.
  • In a separate bowl, stir together dry ingredients, coconut flour, baking soda, cinnamon and salt.
  • Add dry ingredients to wet and mix until well combined.
  • Spoon batter evenly between 7 muffin cups.
  • Bake for ~25 minutes, or until a toothpick comes out clean and the tops are just slightly golden brown.
